Bread and Butter Pudding
Brett Duarte, our Head Chef, gives us a superb recipe to make a delicious Bread and Butter Pudding.
Serves 4
Ingredients:
For the custard mixture you will need:
150ml/5 1/2oz whole milk
150ml/5 1/2oz double cream
1 vanilla pod, seeds scraped out
2 free-range egg yolks
2 tbsp caster sugar
For the pudding you will need:
4 thick slices of stale bread (you can also use brioche or croissants)
50g/1 3/4oz unsalted butter, softened, plus extra for greasing
2 tbsp Marmalade
100g of chocolate buttons (optional)
Method:
1. Preheat the oven to 200C/400F/Gas 6.
2. For the custard, place the milk, cream, vanilla seeds and pods into a saucepan and bring to a scalding point, then take off the heat.
3. In a bowl mix the egg yolks and sugar together. Gradually add the vanilla cream mixture, whisking continuously.
4. For the pudding, spread the bread with the butter on both sides.
5. Grease an ovenproof dish with butter, place the bread and chocolate buttons around the dish.
6. Pour over the custard mixture. Place into the oven to bake for 12 minutes, or until the custard has set.
7. Warm the marmalade and brush over the top and place under a hot grill for 1 minute
